Monte Testaccio is literally a hill of broken Roman amphorae — the ancient world's recycling solution — and clubs now operate in caves carved into its base, which is the most Roman layering of all. The neighborhood's market moved into a modern structure but kept its intensity: Roman artichokes, suppli, porchetta from vendors who've been doing this for generations. Testaccio is where Romans eat when they're serious about eating, which in this city is essentially a competitive sport.
